Keisuke Tonkotsu King, Orchid Hotel, Singapore - Ramen just the way you want it

Tonkotsu Ramen
Tonkotsu Ramen
Tonkotsu Ramen, $10.80, $12.80 with flavoured egg

I dropped by Tanjong Pagar for lunch at Keisuke Tonkotsu King with M a few weeks back, and we walked away utterly captivated. The decor was charming, the ramen was lip-smacking good, and the free condiments really won us over. Every ramen gets a ticket which allows you to tick your preferences (taste of soup, chicken oil, noodle texture) and it was just wonderful to have absolute control in designing almost every part of the ramen - only the delicious tonkotsu broth remains fixed. What's more, the condiments are top notch. The sesame seeds (available in a small suribachi) added a lovely fragrance to the ramen, and the seasoned bean sprouts were so good I kept having seconds!

Hakata Ajitama Ramen from Ikkousha, $13

As promised, here's a post on Ramen Champion! It has still been raining almost every day and it sure looks like the rainy season isn't leaving us any time soon. But at least that gives us a lot more reason to tuck into bowls of steaming hot ramen! I've been wanting to try Ramen Champion for some time now, mostly because my friends have been posting salivating tweets about the place since a few months back. So, on a particularly rainy evening, M and I headed to Iluma to check this ramen joint out. When we first arrived, we were pretty intimidated by the long queue but surprisingly, it moved really fast. Before we knew it, we were given tap cards à la Marché's market-style dining system and free to choose whichever Ramen appealed to us most.

Japanese, Hotate Scallop, Cheese
Hotate with Cheese

I have a tendency to suggest Japanese when it comes to eating out. I know loving this cuisine isn't exactly the most novel thing, but Japanese food is delicious, isn't it? The scallops were a little overcooked, but that yolk was so lovely! I actually made a blunder and had 2 dinner plans on the same day, but I figured we could all have dinner together. It turned out fun!

Ramen Santouka, The Central, Singapore

Ramen Santouka, Central, Clarke Quay
Ramen Santouka

Singapore can be a really queer place. It's known to be sunny year round, but occasionally, for some strange reason, it can get pretty cold. So I woke up one morning, thought to myself that the air seemed kinda chilly, and went out clad in a casual long sleeve button down and high waisted shorts (which was pretty thick, in fact), and still felt the chills. The first thought that went into my head was, wow it's a perfect day for ramen. So fast forward to the end of the day, and the all-too-familiar heat was back again. I told you Singapore was queer. M and I still decided to have ramen anyway.

Japanese Ramen Egg
Gorgeous Egg

Santouka is one of those big name ramen-yas that truly deserve a visit. The egg was gorgeous, though I do have a fantastic tolerance for the molten-ness, I love it half molten like this, and I love it really molten too. When it's half molten like this, it's creamy and still retains a little bite, and tastes great when it's mixed with the hearty broth.

Daikokuya Ramen Dining, Singapore

Friday, September 3, 2010
Japanese Ramen, Fried Prawns, Fried Oysters, Salmon Sashimi
Mini Sapporo Ramen with Fried Prawns, Fried Oysters, and Salmon Sashimi Set

My friends and I randomly chose this place for lunch one day. This ramen-ya purportedly serves 4 different styles of ramen - Sapporo, Tokyo, Kyushu and Kogashi. Each ramen syle also comes in a variety of soup bases such as miso, shio, shoyu and spicy miso. My dad used to tell me that a place that sells just one thing always does better than a place that sells everything. A generally accurate statement (with the exception of Hong Kong
