Dozo was fantastic. From the complimentary yuzu sorbet down to the desserts, each course was a wonderful surprise. Initially, I was a little apprehensive, wondering if it would be any different from Tao's (its sister restaurant). My worries were completely unnecessary. You may be paying almost twice what you'd pay at Tao's, but you're getting more than twice in terms of quality and service. When I was at Tao's, I sometimes wondered to myself if certain dishes should count as a "course" in itself, but at Dozo, you're definitely getting the real deal. Even the Yuzu sorbet was markedly superior. It was tangy and refreshing with a great balance of texture and just slushy enough to pass off as a drink instead of dessert - completely different from the one at Tao's. You get a larger serving, too. The fried noodle snacks were visually appealing and fun - the orange ones even had a bit of a spicy kick!

The chef's selection platter was a treat. Yes, it's a tiny sliver of foie gras, but it still melts in your mouth and taste like exotic butter. The scallop was wonderfully seared and tasted really fresh. The smoked salmon was decent, but I'd rather do without the whipped cream that topped it.

Every bite of the foie gras chawanmushi was smooth as custard. It's a little heavier than your usual chawanmushi, which is probably in part due to the foie gras. I liked that the taste of the chawanmushi had just enough hints of foie gras so that it wasn't overpowering. The gratinated escargots topped with yuzu butter was a winner! The combination of escargots with cheese and butter infused with yuzu was pretty much flawless.

The unique, frothy texture of the crab bisque cappuccino style resembled the frothed milk that tops a cappuccino. The taste was great, but I'd have preferred a more substantial texture. M really liked the mushroom soup with truffle, which was fragrant and delicious. The version here is the thinner variety, which I'm completely fine with since it only means there were less starch, potatoes, roux, or any other thickening agent. Again, it was a lot better than the one at Tao's.

And it gets better! The kurobuta pork cheeks was served with a crispy topping baked in butter with some citrus notes - yuzu, perhaps? The contrast of textures between the tender pork cheek and the crispy topping was great. Piled on two sides of the pork cheek, the sweet onion jam adds a dimension that rounds up the flavours very well. The beef tenderloin was simplicity at its greatest. You hardly need anything else when the tender and juicy beef already tastes so good on its own, but the sauce by the side, which again had hints of citrus, was actually very addictive. The pork was great but the beef definitely trumped it.

When it comes to tea, I still prefer mine hot. The hot lavender tea was unbelievably calming and so pretty to look at. I just felt so ridiculously contented every time I took a sip. M's iced fruity refresher was, true to its name, a pleasant and refreshing concoction of juices and fruits.

The desserts were good. Molten chocolate cakes may no longer be the novelty they were a few years ago, but they still make for a satisfying end to a meal. The espresso crème brûlée was an interesting spin on the classic version. It was a tad too sweet but I still enjoyed it.

Our meal ended with a lovely surprise from the Staff, who knew about the occasion! It was a great meal from start to finish. We had a relaxed and wonderful time. In fact, this was definitely one of the most enjoyable meals I've had in Singapore, and I didn't even break the bank!
